It’s smooth, creamy & sweet. There’s officially NO reason to eat regular caramel ever again!
Step 1: Remove pits from 2 cups of dates.
Step 2: Blend dates until paste forms.
Step 3: Add 2 teaspoons vanilla extract.
Step 4: Add 1/4 cup maple syrup.
Step 5: Blend 4-5 minutes, or until no specks remain.
My favorite way to eat it is in my coffee. A caramel latte used to be my coffee order. I’m so glad I can now enjoy my favorite treat without all the calories and added sugar.

Delicious with pretty much everything!
- 2 cups dates, pitted
- 2 teaspoons vanilla extract
- ¼ cup pure maple syrup
- ¼ teaspoon sea salt
- Pit the dates.
- In a food processor, blend dates until soft ball forms.
- Pour in vanilla extract, maple syrup and salt. Blend 4-5 minutes, or until few specks remain intact.
- Save in an airtight jar in the refrigerator.
