Cashew Butter Protein Skillet Cookie

This protein-packed treat is super easy, vanilla-y, and the perfect on-the-go breakfast for people with a sweet tooth.

Ingredients
  • 1 egg
  • ¼ cup pure maple syrup or honey
  • ¼ cup coconut oil, melted
  • ⅓ cup cashew butter
  • ½ teaspoon vanilla extract
  • 1 Tablespoon almond milk
  • ⅔ cup oat flour
  • ⅓ cup vanilla protein powder (I used Tera's Whey)
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 Square Bars, cubed
Instructions
  1. Preheat oven to 325 degrees F.
  2. Line an 8-inch skillet with parchment paper or grease well with olive oil. Set aside.
  3. In a large mixing bowl, whisk egg.
  4. Melt coconut oil in a heat-safe bowl, then add to egg. Add cashew butter immediately and stir until combined.
  5. Add vanilla and almond milk.
  6. Add oat flour in batches, stirring between each one.
  7. Add protein powder, baking soda and salt and stir until combined.
  8. Pour mixture into skillet and even out with the back of a spoon or spatula.
  9. Cut each Square Bar into 16 cubes and sprinkle on top of the mixture.
  10. Bake 17-20 minutes, or until lightly browned around the edges.
  11. Cool completely, then cut into 6 slices and top with nut butter.
