Banana Peanut Butter Chocolate Chip Bars

Serves: 9 large bars
Ingredients
  • ¾ cup creamy peanut butter
  • 2 Tablespoons coconut oil
  • 1 ripe banana, mashed
  • ½ cup coconut sugar
  • 1 teaspoon vanilla extract
  • ¼ cup almond milk
  • 1 cup oat flour
  • ¾ cup rolled oats
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup dark chocolate chips
Instructions
  1. Preheat oven to 350 degrees F. and line an 8x8 pan with parchment paper.
  2. Melt peanut butter and coconut oil together in the microwave or preheated oven.
  3. Add to medium-size mixing bowl and stir.
  4. Add banana and mash to combine.
  5. Add coconut sugar, vanilla and almond milk. Stir to combine.
  6. Add remaining dry ingredients and stir to combine,
  7. Fold in chocolate chips.
  8. Transfer to baking pan and bake for 22-25 minutes, or until lightly brown.
  9. Let cool, then cut into 9 squares.
Notes
* Store in an airtight container in room temperature for up to 5 days.
