Maple Pecan Waffles

These waffles are fluffy, sweet and super comforting!

Serves: 5 waffles
Ingredients
  • 1¼ cup unsweetened almond milk
  • 1 large egg, lightly beaten
  • ¼ cup pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 2 Tablespoons plain Greek yogurt
  • 1½ cups whole wheat flour
  • ½ cup rolled oats
  • 1½ teaspoons baking powder
  • 2 Tablespoons coconut oil, melted
  • ½ cup pecans, toasted and chopped
Instructions
  1. Preheat oven to 350 degrees F. and line a baking sheet or pan with parchment paper. Set aside.
  2. Preheat waffle iron.
  3. In a large mixing bowl, whisk almond milk and egg together.
  4. Add maple syrup, vanilla and Greek yogurt. Stir to combine.
  5. Stir in flour.
  6. Stir in oats and baking powder.
  7. In a small heat-safe bowl, melt coconut oil in microwave or pre-heated oven.
  8. Pour oil into batter and stir to combined.
  9. Place pecans on baking sheet and toast for 5 minutes, or until fragrant.
  10. Let cool for 2-3 minutes, then chop. (Don't chop into too small pieces.)
  11. Stir pecans into batter.
  12. Grease waffle iron with olive oil or coconut oil.
  13. Scoop heaping ½ cup batter into center of waffle iron and cook according to your waffle iron's instructions.
  14. Continue with remaining batter.
  15. Serve warm with maple syrup, banana slices or fresh berries.
Notes
* You can use soy milk, 1% milk, rice milk or cashew milk instead of almond milk.
