Easy Oatmeal Pancakes

Serves: 6 medium pancakes
Ingredients
  • ½ cup rolled oats or quick oats
  • ½ cup + 2 Tablespoons whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg, lightly beaten
  • 1 Tablespoon pure maple syrup + more for serving
  • 1 teaspoon pure vanilla extract
  • 1 Tablespoon coconut oil, melted
  • 1 Tablespoon applesauce (or substitute coconut oil)
  • ⅔ cup unsweetened vanilla almond milk
Instructions
  1. In a large mixing bowl, combine all dry ingredients.
  2. In a medium bowl, whisk egg. Add maple syrup, vanilla, melted coconut oil and applesauce and stir to combine.
  3. Add almond milk and stir until combined.
  4. Heat coconut oil, olive oil or non-stick spray in a medium pan or griddle over medium heat.
  5. Once oil is hot, lower heat to medium-low and scoop ¼ cup batter into pan.
  6. Cook until bubbles form, then flip and cook until other side is firm.
  7. Repeat with remaining batter.
  8. Serve warm with pure maple syrup.
