Chunky Monkey Waffles
 
 
These incredible waffles are life changing! You won't see something this great anywhere else!

Serves: 4-5 waffles
Ingredients
  • 1 cup all purpose or whole wheat flour (If using whole wheat, stone ground works best.)
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • 1½ small very ripe bananas, mashed
  • 1 large egg
  • 2-3 Tablespoons pure maple syrup
  • 1 cup unsweetened almond milk (or milk of choice)
  • ½ teaspoon vanilla extract
  • ⅓ cup creamy natural peanut butter
  • 3 Tablespoons walnuts, chopped
  • 1 ounce dark chocolate, chopped or broken into small pieces
  • additional toppings: maple syrup, peanut butter, banana slices
Instructions
  1. Pre-heat your waffle iron.
  2. In a large mixing bowl, combine flour, baking powder and salt.
  3. In a medium bowl, mash bananas.
  4. Add egg and whisk.
  5. Add egg mixture to dry ingredients and stir to combine.
  6. Add almond milk, vanilla and peanut butter. Stir to combine.
  7. Chop walnuts and chocolate.
  8. Add to batter and stir.
  9. Grease waffle iron with olive oil or non-stick spray.
  10. Scoop a heaping ⅓ cup or ½ cup batter into center of waffle iron.
  11. Cook according to your waffle maker's instructions.
  12. Serve warm with additional toppings.
Notes
* You may need a bit more milk if batter seems too thick.
