Jumbo Peanut Butter Cups

These incredible cups resemble Reese's cups, except they're vegan, gluten-free and all natural.

Serves: 6 jumbo cups
Ingredients
  • 1½ cup chopped dark chocolate
  • 2½ Tablespoons coconut oil
  • ½ cup natural creamy peanut butter
Instructions
  1. Line muffin tin with 6 paper cupcake liners.
  2. In a medium heat-safe bowl, melt chopped chocolate with 1½ Tablespoons coconut oil.
  3. Pour ½ melted chocolate evenly into 6 cups.
  4. Freeze 13-15 minutes, or until chocolate hardens.
  5. In a medium bowl, melt coconut oil.
  6. Stir in peanut butter.
  7. Take chocolate out of freezer and add evenly over each chocolate.
  8. Pour remaining melted chocolate on top.
  9. If desired, use a toothpick to swirl peanut butter around with chocolate.
  10. Freeze 25-30 minutes to harden.
  11. Before eating, move to refrigerator.
Notes
* To make regular sized peanut butter cups, use 7 muffin liners.
